Brown Sugar Pecan Cookies


Just before the beginning of December we bought a massive bag of pecan halves (verging on ridiculous really), they're one of my favourite nuts to eat, especially when we have lots of cheese in the house  -which we always do in December. Even with my constant snacking and using them in so many different ways, we still ended up with a huge amount left over and I thought they should be put to good use! I headed straight to Pinterest for ideas and inspiration and came across these utterly amazing sounding little cookies, I immediately (after pinning) stopped searching and whipped up a small batch to try. They were such a success I made a full batch and trust me...they didn't last long!

You can find the recipe I used here, it's so perfect that I made no changes of my own. Even the amount of icing! Normally I find myself making double or even sometimes more than what a recipe calls for, but with this recipe there is a very generous amount for all the cookies (and eating). From finding these cookies I've also found so many more things on Ashley's blog that Id love to try out! You should have a look too.

Made Me Happy This Week

{a few pictures from our walk late this afternoon, I think it'll be beautiful in Summer -I'm looking forward to going back}

I've been full of a cold this week and while at the beginning I was doing my best to fight it off...I eventually lost the battle! Leaving me to fully believe that none of the so called cures work -or even help...and I've tried a lot this week! If you know of any that actually do then please let me know! This has made the second half of the week a right off and I spent Valentines Day in bed mostly with Lemsip and a hot water bottle, but to be honest we didn't have any plans so it was no big deal. Today we thought a little fresh air could do some good and went for a little wonder around a near by lake. It's the first time I've realised there's path for you to walk all the way round (13 miles to be exact), I can't believe I didn't know it was there before. I'm looking forward to the warmer weather so we can maybe go walk the whole way, there is even a few small cafes on the way round which I'd really like to try...I would also like to find out how long it will take to walk 13 miles? 

1. Lemsip and other drugs! The only help I've had had this week with my rubbish cold.

2. Surprise doughnut treats on Valentines day.

3. Mid-week dinner with Paul's mum and dad. We haven't seen them much lately so it was lovely to spend the evening with them. I love having people over for dinner -ever trying to be that domestic goddess. 

4. Our new living room lamp arrived this week and I love him! (the name of the design is Alfred, I haven't named the lamp). It makes me laugh sometimes how excited I get by home wear these days.

5. Paul and how he has looked after me while I've been sick, he's a sweetie. Especially because its just a cold but then I would do the same for him :)

6. At the beginning of the week my friend came round to help me in a terrifying situation. I was alone, in the house...with a HUGE spider! Thankfully he came round right a way and took care of it, I have no idea what I would have done if he hadn't -you have to laugh at these things lol.

7. My little fluffy friend keeping me company, she is such a little sweetheart and would just lay on your lap all day long if you let her.

Made Me Happy This Week


This week I've been slowly but surely getting back into some regular exercise and I'm feeling all the better for it too! We didn't get involved in the usual healthy January kick that everyone starts, we chose to ignore it really. But that gave us time to think about what we wanted and things we wanted to change, and to make some long term plans not just short term resolutions (also it gave us time to use up all the left over Christmas food and chocolate!) We have fallen into some really bad habits such as not moving as much as we should and we are making a real effort to change that. Can we also just take a minute to appreciate the picture above? Nature is honestly amazing, the beauty sometimes seems magical -no filters needed!

1. The sun being up much earlier. It's no secret that I love Winter but I have to say, I'm glad it's starting to get much lighter much earlier in the morning. Its hard to "get up and go" when it's dark and you want to go back to sleep.

2. Eggs! Such a a random thing but we have been eating them different ways all week, which I am enjoying because I have an on-off relationship with the little things. Sometimes I can't think of anything worse to eat then other times I love them...odd, I know.

3. I am absolutely loving (maybe too much) the smell of our new laundry detergent! I washed our bedding with it at the beginning of the week and when I got into bed that night the smells was so good. Clearly I'm easily pleased, if you are interested it was Surf Wild Flowers and Morning Dew.

4. Spring fashion, it's a great time of year when the sales finish and the stores are again full of new exciting stock -and lots of pastel shades.

5. Looking at new BBQ's and planning for Summer get togethers.

6. Cheddar flavoured popcorn, I have become obsessed! It's my new favourite snack and on a side note...its not bad for you so guilt free snacking :)

7. A coffee and a catch up this afternoon in a local cafe after snapping up the last table in the place! It makes the lattes taste even better.

New In: ASOS Shoe Boots


These boots are somewhat of a personal achievement for me! I first seen them on ASOS last October (around that time anyway) and I knew instantly that I wanted them, I planned on ordering a pair as soon as I was home but by the time I was, they had sold out. I kept an eye on them for a while but no knew stock came in and then -sadly, the boots had gone from the website.

I had the odd look after that with no luck, until a couple of weeks ago when they reappeared. I kept waiting assuming my size would never come back in but hooray it did. I snapped them up and as soon as I had they had sold out again. It may seem like a lot of effort for a pair of shoes but it was one of those things you see and instantly know you love and want -even if they might not be to everyone's taste. So all of my online shoe stalking paid off and now they are mine :)

All I need now is for the frost to go so I can wear them!

9 Years Today...


Today marks nine years of Paul and I being a couple. It really makes we giggle when we say numbers like that because it doesn't feel as if it could possibly be that long -but, on the other hand, sometimes I feel as if I've known him forever! We have actually been friends for nearly 16 years, really we have grown up together, so in a way I guess I have.

I didn't plan on doing a post about our anniversary and we don't have any real plans to tell you about, in fact, I think what were planning for tonight is an evening on the sofa with some films and mac n cheese. Even though we have no huge plans I still like that we do something to celebrate. Without sounding too soppy, they really have been the best years of my life so they deserve to be noted when this day rolls around each year. Also because I feel so incredibly lucky to have Paul in my life, he is the most wonderful, loving person and it makes me smile every day just to know that he's there.


I hope you all have a lovely night, I'm off to get cuddled up on the sofa :)

Made Me Happy This Week


This past week has been totally and completely Frozen themed! From the frost in the garden each morning and the occasional snow showers, to the snowflakes, snow balls and pom-poms we have been making all week. The reason for all this you ask? My best friends little girl is turning 5 (this coming week) so she had her birthday party yesterday, and seeing as everyone (not just the children) are Frozen mad...it was really our only choice for theme! Even as all the children arrived we found that we had 4 or 5 little Elsa's. It's amazing what you can do with some paper and cotton wool, it just goes to show that you really don't have to spend a lot of money for good decorations -just some time. We have also had such fun all week making them, playing music and laughing -the planning is just as much fun as the actually party! With all the party madness this weekend has been a busy one, so I'm glad today has been on a more chilled out level and I'm now in my pjs with a warm cup of tea.

1. Smiling at strangers and when the smile back. It's hard to be sad when you smile :)

2. The continuing frosty weather we are having. I am starting to get a little excited for Spring and Summer but I'm enjoying waking up to frost and hot tea for now.

3. Very late, un-planned evenings with friends. Those nights when you're too busy laughing and enjoying yourself over pizza and catch-ups to even notice the time. We played old music and didn't get to bed until 2am!

4. New shoes! That one obviously needs no explaining. 

5. A naughty little trip to Krispy Kreme mid-week for a tasty doughnut. The temptation to buy a box is always there but we resist!

6. Feeling my best friends baby in her belly, no matter how old I get that will always feel so surreal. We can't wait to find out what little bump is going to be! Just over two weeks to go :)

7. My new koala slippers (pictured above), Paul keeps saying they are mice but I think he's wrong...what do you think? What ever they may be, they are so warm and comfortable...and a little bouncy.

8. Defeating a little bit more of a fear. I mentioned this a few posts back and while I'm still not sure I want to talk about it right now, I felt so very proud of myself on Thursday and it made me so happy it had to be on this list.
