My Favourite Fluffy Pancakes

Is there anything better than pancakes for breakfast? They have to be one of our favourite weekend treats, and possibly the best way to start a lazy Sunday morning. The smell of them cooking fills the house, and then you get to sit down to a big stack of them, with a mug of coffee and breakfast tv.

While the options for topping are pretty much endless, thankfully Paul and I agree when it comes to the actual pancakes. We like thick fluffy American style pancakes! The thinner crepe ones are fine, but they always feel more like the kind of dessert you get from a food market. You know the ones I mean, the ones filled with Nutella and whipped cream.

This is my go-to recipe for tasty fluffy pancakes, it's really simple and can be doubled if you're feeding a group of hungry people. I get eight from a single batch, and that makes four nice sized pancakes each for me and Paul.

Ingredients:
1 cup of plain flour
2 tsp of baking powder
2 tbsp of caster sugar
3/4 cup of milk
1 egg
2 tbsp of melted salted butter

...and a little oil for cooking.

- In a bowl, sieve together your flour, sugar and baking powder to make sure there are no lumps. Then in a separate bowl, mix together the milk egg and melted butter -making sure to let it cool down first so it doesn't scramble your egg!

- Add the wet ingredients to the dry, and mix to combine everything.

- Have your pan on a medium to low heat and spray or brush with a little oil. Add a small ladle of the batter and let it cook for a couple of minutes on the first side.

-When you have little bubbles bursting on top, that's when it's time to flip. I use a spatula...but feel free to toss them if you're feeling really brave! 

Then serve with whatever takes your fancy. I've doubled and tripled this recipe before with no issues, and added chocolate, blueberries, nuts...as I said, the options are endless! But, our favourite way to eat them will always be covered in maple syrup and fresh maple butter, it's just the best thing! And far too go to save for just the weekend!
