Made Me Happy This Week

I have a question for you...where has spring gone? It's so cold out there, and the temperature still seems to be dropping. It was even snowing a few days ago. But I can't complain, we have another three day weekend starting tomorrow and it should be a good one, we have a couple of birthdays, possibly a family dinner and hopefully we'll get to go and see the new Guardians of the Galaxy film!! It's definitely going to be a busy few days, but I can't wait to have a lazy morning tomorrow with Paul. What are your plans for the next few days?

1. A late night drive with Paul when we couldn't sleep.

2. Spending time making plans for a trip we're going on, that I'll tell you all about soon!

3. Building Ikea furniture. When you do it with the right people it can be so much fun, and always end in laughter. Only made better with lots of tea and biscuits.

4. The way Sookie falls asleep in my jumpers and hoodies while I'm wearing them. She's like a little hot water bottle, with her teenie tiny nose sticking out the top. So cute!

5. Suggesting to my friend -who was complaining about his skin, that me might want to try some new skin care. Only to receive a text a couple of days later, showing me that he'd bought nearly everything Liz Earle sells! It did make me laugh.

6. The beautiful blossoms that are currently in bloom in our garden.

7. Billions...do you watch it? It's so good. I think we have another episode to catch up with tonight.

8. Those two in the picture above, nothing in this world makes me happier.

Made Me Happy This Week

This time last year Paul and I were in New York. I can't help be a little sad that we aren't there right now. I'd love to be back, walking the streets, drinking too much coffee, taking in the sight's and sounds and most of all, enjoying that smell I love! The one you smell each morning as the city wakes up. But until we go back, I have my giant New York Starbucks mug and our album of photos to tide me over. Also, this Sunday Paul is going to make us mac n cheese, he's going to try and get it as close to The Mac Bar as he possibly can. I'm quite excited about that! Hope you have a fantastic weekend!

1. Kinder chocolate bars, it's just not safe to have them in the house...I will eat them all!

2. Writing out a huge shopping list. We haven't done a massive food shop for a couple of months now, but we're running out of things I always like to have in the cupboards. I know a lot of people find it to be a chore, but I bloody love making lists...especially for food shopping!

3. My mums face when she seen her birthday cake, she actually screamed!

4. Listening to a new pop punk playlist Paul found on Spotify, I don't think there's a song on there that we don't love!

5. A very windy afternoon at the beach, followed by a walk into town trying to dodge the crazy rain showers.

6. Managing to pick up a Hotel Chocolat Easter egg in the sale. Half price!

7. Beginning to see the very first signs of our flowers growing...I think. I mean they could also be weeds but it's too early to tell. But until I know for sure they are staying put.

8. Chocolate crispy cakes. To use up some left over melted chocolate to stop it going to waste, I poured in some cereal and filled little cupcake cases. The easiest ever treats to make but so bloody good!

Made Me Happy This Week

It's Friday, and whats even better is that it's also the Easter weekend!! How are you spending yours? We have a rather lovely weekend planned, the sun is apparently going to be shining over the next few days so we are going to try and go out to do some exploring. On Sunday Paul is making a roast dinner for us both, and I think we'll be finishing the night with movies and all the chocolate eggs we can eat! Although, we currently don't have any. We had one each, but somehow they got eaten last week...oops. So I think we'll be picking up another one each tomorrow.

1. Iced coffee while walking around on a very hot day! It honestly felt like mid summer...I kind of loved it!

2. My little Easter chicks that are hidden around the house, hopefully when it comes time to put them away I remember where they all are.

3. A fresh bunch of white tulips and some painted egg decorations to add in beside them.

4. A very kind couple I met -and ended up having tea with, while trying to find the home of a little lost dog. They gave the little guy some chicken, and made me tea because I was bloody freezing!

5. The accessories Sookie comes home from the groomers with, they are so cute! Today she had a baby pink floral bandana.

6. Also the way she smells when she comes home, I'm not sure what they use but it smells amazing!!

7. How warm and cosy I am right now while writing this post. The heating is on and I'm wrapped up in our enormous fluffy throw.

8. How excited Paul is about something he's ordered for my birthday...which isn't until June! I'm not sure I can wait that long.

No-Bake Mini Eggs Cheesecake

Is there anyone who doesn't like the smell of mini eggs? 

For a long time I didn't eat Cadbury's chocolate, but each year as Easter rolled around I would love it when Paul would open a bag of Mini Eggs, and I could enjoy the smell! I do eat Cadbury's now, so I also get to enjoy the eggs but the smell is still my favourite part.

It reminds me of those dolls I had as a child. The ones that looked like a cupcake until you flip them open? They smelled of cake and Mini Eggs, but anyway, the recipe...

I wanted to make something for Easter this year, and it usually ends up being something baked, like carrot cake, cupcakes, something hot. But this year I though why not cheesecake. It's a simple no-bake cheesecake that tastes good on the day you make it but amazing the day after! So if you can make it in advance you should. I will also say that we like quite a think base to our cheesecakes, so if you prefer less then just half the quantity of biscuits and butter.

Ingredients:
base~
400g of digestive biscuits -crushed
170g of salted butter -melted

topping~
800g of Philadelphia
200g of mascarpone cheese
150ml double cream
200g of icing sugar
1/2 a teaspoon of vanilla extract, or seeds from one vanilla pod
200g of Mini Eggs - crushed
-plus any extra eggs if you want to decorate the top.

- Add the crushed digestives and melted butter to a bowl and mix together until fully combined. Pour this into a loose bottom cake tin and press it down with the back of a spoon until you have a firm even layer. Put this in the fridge to set while you get on with the topping.

- To a large mixing bowl, add the Philadelphia, mascarpone and icing sugar and mix until smooth. In a separate bowl beat the double cream and vanilla until until you have soft peaks, and then fold this into your cheese mixture.

- Add your crushed up mini eggs to the topping mixture and then spread this on top of the chilled base, and level out the top. Leave this in the fridge to set for at least 5 hours, or over night if you can -trust me, it's worth it.

- Decorate however you like, I added extra Mini Eggs, and serve straight from the fridge.

Made Me Happy This Week

This week my brothers girlfriend moved up from Essex to live with him. We've been getting to know her over the last few days and she's so lovely, and what I can only describe as perfect for him. It was also his birthday on Tuesday so we had them up for cake and later we headed out to TGI Fridays for some tasty food -and of course left stuffed by the huge portions! Not before they made him stand up so all the staff could sing 'Happy Birthday'...it was quite funny. Today I've been finishing off the painting at my mums, it's looking -if I do say so myself. Now she just has to wait for her furniture to be delivered and then she can start enjoying it. Hope you all have a fab weekend! 

1. Cups of tea when Paul makes them for me. They're always perfect.

2. Fishnet socks! I freaking love them. I've actually owned them for years and years now, and a few weeks ago I started wearing them again and just haven't stopped. They just look so good with jeans.

3. Birthday cake.

4. Crisp sandwiches. I know, to some people they are the worst thing ever. But I bloody love them!

5. Late night supermarket shopping, it's honestly the best time to go.

6. The leaves and buds covering our apple trees, it's so lovely to see them growing again after being bare for so long.

7. This video from Zoella, that had me so excited watching it that I had to call my little brother to remind him of everything!! If you were a 90's kid go watch it if you haven't already -it's so funny! It's also made me wish we still had all our old toys.

8. An evening of catching up on TV shows with Paul.

The Joy of Polaroids

From the age I started taking pictures, I've always had a digital camera. The days when loading film was the only option was before my time, although I have done it plenty of times. While I only ever had digital cameras, my mum kept her film loaded ones for a long time and I loved using them. It was so exciting to carefully load film into the camera and not know what you were going to get until that film had been used, and developed.

Of course time has moved on, and the world we live in is now a digital one. We have folder after folder on our PCs and laptops of pictures we've taken, phones full of them too! But we hardly ever print them these days. I know I don't, I mean to, I say I'm going to, but I never get around to it.

I think it's why I've always loved Polaroids so much! When I was younger -I think early to mid teens, I had one of the big grey Polaroid cameras. I loved it!! It was my favourite thing and I took it everywhere. It makes me so sad that I now have none of the photos taken with it, they've somehow all been lost over the years. But the camera is still somewhere in the attic.

There is something so infinitely wonderful about Polaroids. The way they perfectly capture a moment how it is, unedited and unfiltered. You can't take 35 and choose the best one, that's it. You have it as it was meant to be. The fact you you also instantly have an image to hold in your hand is such a novel thing, and they have a feel to them that only Polaroids can give.

It seems that we've come full circle in a way. Vinyl is back and seems to be getting bigger, Polaroid cameras are as popular as ever and I think it's because we all kind of miss having something to hold in our hands. Digital is fine, but sometimes the old ways are they best and I'm so happy they're back.
