Easter Rocky Road

I hope you're having a lovely Easter weekend. Have you eaten your body weight in chocolate eggs yet? I think I'll be doing that tomorrow, as today, we're having family up for lunch - which I'm really looking forward to! We're making this cheesy, chicken and ham pie that is just amazing! Along with all the usual sides, mash, parsnips, carrots, green bean...all the good stuff. Oh, and my carrot cake for dessert.

If you're looking for a way to use up some of your Easter bits so they aren't laying around tempting you for weeks to come, then these rocky roads treats are perfect. They are very simple, require no baking and you can add anything you like into them, so any left of chocolate or sweets...throw them in.

This is what I added to mine...

Ingredients:
400g white chocolate
80g mini marshmallows
100g digestives
150g mini eggs (for mixing in)
50g mini eggs (for decoration)
3 tablespoons of freeze dried raspberries

- Line a square brownie tin with tinfoil or greaseproof paper. I used a 20cm tin.

- Break the white chocolate in to a heatproof bowl, and melt in the microwave with 20 second bursts, stirring between each one so the chocolate doesn't burn.

- When melted, stir in the broken digestives, mini mallows, mini eggs and freeze dried raspberries, and mix until everything is well coated in chocolate.

- Pour into the lined tin and flatten out with the back of a spoon. Place your leftover 50g of mini eggs on top, and leave in the fridge for and hour to set.

These will keep for a couple of weeks in a sealed container, but nothing homemade and covered in chocolate ever really lasts that long.
